Creamy Burrito Casserole

This creamy burrito casserole is a cheesy, comforting favorite layered with ground beef, sour cream, and tortillas. Perfect for busy weeknights or freezer meals.

Ingredients
  

  • ▢ 1 lb ground beef
  • ▢ 1 small onion diced
  • ▢ 1 packet taco seasoning
  • ▢ 1 cup salsa
  • ▢ 1 can 10 oz cream of mushroom or chicken soup
  • ▢ 1 cup sour cream
  • ▢ 2 cups shredded cheddar or Mexican blend cheese
  • ▢ 6–8 flour tortillas
  • ▢ Salt and black pepper to taste

Instructions
 

  • Preheat your oven to 375°F and grease a 9x13 baking dish.
  • In a skillet, brown the ground beef with diced onion. Drain fat.
  • Add taco seasoning and salsa. Simmer 3–4 minutes.
  • In a bowl, mix soup and sour cream until smooth.
  • Spread a little sauce on the bottom of your baking dish.
  • Layer tortillas, beef mixture, cheese, and sauce. Repeat.
  • Finish with sauce and cheese on top.
  • Bake 20–25 minutes until bubbly and golden.
  • Let rest for 5 minutes before serving.

Notes

– Swap ground beef for turkey or lentils
– Use Greek yogurt instead of sour cream
– Add black beans or corn for extra bulk
– Freezes well before or after baking
– Can be assembled 1 day ahead and refrigerated
